A popular gluten-free pasta restaurant is due to open its second location in Santa Monica next year.

Impasta gluten-free pasta restaurant will open a second place in Santa Monica at 413 Santa Monica Boulevard, according to What Now Los Angeles.

The cleverly named concept began as a delivery service during the pandemic. They did so well that they were able to open a stationary location in Beverly Hills in September 2021. Their motto is “Cave Pasta, not Carbs” and offers vegetable noodles such as spaghetti or tagliatelle made from pumpkin, zucchini noodles or zoodles or cauliflower gnocchi. Some of the pasta dishes have vegan options like Impossible sausage and vegan cheese.

There are even seaweed pasta and dishes with palm hearts, as well as salads and impizza with a cauliflower crust.

The pasta dishes use traditional Italian sauces such as pomodoro, puttanesca or pesto. Owner Harrison Litvack estimates the Santa Monica edition will open in late 2022.

What Now Los Angeles quotes Litvack, who said, “We’re excited because it’s a completely different market for us. Many of our target groups live on the west side. We hope that this second location will make our product more accessible to Los Angeles. “
